Grilled pilgrim scallops, truffle seasoned crême de chou-fleur, hazelnut & bacon crisps, cauliflower, apple & bacon consommé
Baked cauliflowers, feta cheese, deep-fried quinoa, pickled & frizzled baby onions, watercress

Rooster breast, carrot & liquorice purée, pickled Swedish turnips, tarragon-buttered gravy and mashed root vegetables
Deep-fried chickpea balls, mashed green peas, velouté of curry, crisp fried chick peas; pea, spinach and leek salad
Norwegian early spring cod, mint seasoned mashed peas, smoked velouté de moules, pea, spinach & chard sautée, herb-tossed potatoes.
